Get the ultimate Italian deli experience with this Caprese Pizza Sandwich. The viral videos of pizza sandwiches have got me excited and I knew I had to make a flatbread style. Layers of aromatic pesto, fresh basil, cherry tomatoes, fiery rocket, creamy burrata, and succulent slices of mortadella stuffed in a thin crusted pizza sandwich. Sounds delicious right? You can of course use homemade pizza dough but for this I used ready to use to shorten the prep time. Perfect for lunch or a light summer’s dinner.
CAPRESE PIZZA SANDWICH
SERVES 2: //MADE IN: 40 MINS // DIFFICULTY: EASY // MEATY

INGREDIENTS
14 mortadella slices
250g mixed baby tomatoes
70g basil pesto
1 burrata
40g rocket
1x 400 ready to use pizza dough ( I used Pizza Express)
Fresh basil leaves,to garnish
Olive oil, to drizzle
Salt and pepper
METHOD
Preheat the oven to 200c.
Firstly, halve all your baby tomatoes and place in a bowl. Drizzle with a little bit of olive oil and season with salt and pepper. Set aside.
Place the dough on a floured surface and portion into two. Carefully shape the balls into about 20cm disks, either using a rolling pin or stretching with your hands.
Drizzle them with olive oil and then fold them over. Drizzle the tops with olive oil and place on a large, floured baking tray. Place in the oven and bake for 10-12 minutes or until golden brown.
Remove the pizza sandwiches out of the oven and carefully open them out. Spread the bases with pesto before topping with burrata, rocket, cherry tomatoes and mortadella slices. Scatter with basil leaves and fold over with the otherside.
