FROZEN WHIPPED FETA SUNDAE

Move over sweet sundaes...let me introduce you to the savoury kind.
This is my Frozen Whipped Feta Sundae! it's basically a Greek salad... but frozen. It''s packed with all those fresh flavours and sunshine vibes you need during this glorious weather.
Fun, refreshing, and a little creative. It's the ultimate chip 'n' dip upgrade for any BBQ or gathering.
FROZEN WHIPPED FETA SUNDAE
MADE IN 25 MINS /EASY// VEGGIE

Ingredients
200g feta
150g Greek yoghurt
1 tbsp olive oil, plus extra for drizzling
1–2 garlic cloves
Juice of 1 lemon
Salt and black pepper, to taste
3 Kalamata olives, pitted and sliced
A few fresh mint leaves
½ frozen cucumber
½ large frozen tomato
To serve:Homemade flatbread chips, pitta or crisps
Method
In a blender or food processor, combine the feta, Greek yoghurt, olive oil, garlic, lemon juice, salt and pepper. Blitz until smooth, thick, and creamy.
Spoon the whipped feta into a shallow container, spreading it to the edges. Freeze for 1–2 hours, until the top is set but the centre stays a little soft.
Using an ice cream scoop, form neat balls of frozen whipped feta and place into small sundae dishes, ice cream bowls or martini glasses.
Drizzle with olive oil. Grate the frozen cucumber and tomato over the top (straight from the freezer is fine). Add another drizzle of oil, then finish with sliced Kalamata olives and fresh mint leaves.
Serve immediately with homemade flatbread chips, warm pittas, or crisps. Dive in with a spoon or scoop up with chips.
