GARLIC BREAD GRILLED CHEESE

So I think this topic of ‘mayo vs butter’ is a touchy subject. As a Brit, I was pretty put off by the idea of spreading mayonnaise on the exterior of a toastie but after a few trials and errors, I think I am a convert. The science behind it actually makes sense, the combination of the mayonnaise fats (oil + egg yolks) with the melted butter allows the bread to brown perfectly. Plus. mayonnaise has a higher smoking point than butter so it helps with the melting of the cheese.
This recipe was inspired by my love for the perfect pairing, tomato soup and grilled cheese. There is nothing more comforting and satisfying than biting into a grilled cheese that has just been dunked into a steaming bowl of soup. My grilled cheese got a garlic bread makeover and it works so well with my My ‘creamy, roasted tomato and fennel soup’.
GARLIC BREAD GRILLED CHEESE
MAKES :1 /MADE IN: 15 MINS /DIFFICULTY:EASY/ VEGGIE

INGREDIENTS
2 slices white bread
2 tbsp mayonnaise
2 garlic cloves, grated
1 tbsp fresh parsley, chopped
1 gouda slice
1 Red Leicester slice
1 American cheese slice
1 tbsp unsalted butter
Salt, to season

METHOD
In a small bowl, mix the mayonnaise, garlic, parsley and a pinch of salt together.
Lay the bread slices on a board and spread the garlic mayo on both pieces. Flip one slice over, mayo side down, and place the cheese slices on the other side. Lay the remaining piece of bread, mayo side up,on top.
Melt the butter over a medium heat in a large-non stick frying pan. Cook the grilled cheese on both sides for about 4 minutes or until golden brown and the cheese has completely melted. (The key to a perfect grilled cheese is slow and low. If the toastie is browning too quickly, reduce the heat and allow the cheese to melt.)
Transfer to a board and slice in half.
