If you’re looking for a festive dessert that’s as fun to make as it is to eat, this Magical Christmas Ice Cream is the perfect choice. This ice cream is a show-stopper packed with playful, delicious ingredients like sour cherries, pistachios, jelly beans, shortbread, and a shimmer of edible gold. But what makes it real special is the Popping candy. It adds a surprise burst of magic in every bite.

MAGICAL CHRISTMAS ICE CREAM
Serves 2 // made in 25 minutes plus chilling time
Ingredients
75ml whole milk
60g granulated sugar
150g double cream
1 tsp vanilla essence
1 tsp golden shimmer or edible gold lustre
2 shortbread biscuits, roughly chopped
40g sour cherries, roughly chopped
30g pistachios, roughly chopped
70g jelly beans
40g popping candy
50g hazelnut white chocolate (or your favourite chocolate), roughly chopped
Pinch of salt, to taste
Edible gold stars, to sprinkle, optional
Method
Place the bowl of your Cuisinart Solo Scoop Ice Cream Maker in the freezer for at least 24 hours before starting.
In a mixing bowl, combine the milk, granulated sugar, and a pinch of salt. Stir until the sugar has fully dissolved.
Stir in the double cream, vanilla essence, and golden shimmer. Then fold in the popping candy, shortbread pieces, sour cherries, pistachios, jelly beans, and hazelnut white chocolate until evenly combined. Cover the bowl and chill in the fridge for at least 2 hours or overnight.
Once ready, attach the frozen bowl to the ice cream maker and turn it on. Slowly pour the chilled mixture through the funnel, letting it churn for about 25 minutes or until the ice cream reaches a thick consistency.
You can enjoy the ice cream straight from the machine for a soft-serve texture. For a firmer consistency, transfer it to a freezer-safe container and freeze for 2–3 hours.
Scoop the ice cream into bowls and sprinkle with edible gold stars. Serve immediately and enjoy.
