Nando’s Fakeaway Piri-Piri Chicken & Halloumi Burger

POV: You’re broke but craving Nando’s? Don’t worry, I’ve got you covered with this delicious fakeaway version of the Butterfly Burger! Two juicy, piri-piri marinated chicken thighs, stacked with crispy golden halloumi in a perfectly toasted ciabatta bun. Serve it up with your favorite Nando’s sides and save that sweet, sweet money.

NANDOS FAKEAWAY PIRI-PIRI CHICKEN & HALLOUMI BURGER

Servings: 3 //Prep time: 15 minutes (plus marinating time)// Cook time: 15-20 minutes


Ingredients

  • 2 tbsp rapeseed oil, plus extra for grilling halloumi and buns

  • 2 tbsp runny honey

  • 2 tbsp smoked paprika

  • 1 tbsp dried oregano

  • 1 tbsp dried thyme

  • 2 tsp cayenne pepper

  • 2 tsp garlic powder

  • 1 tsp ginger powder

  • 1 tbsp white wine vinegar

  • Juice of 1 lemon

  • Salt and pepper, to taste

  • 6 chicken thighs

  • 250g halloumi, cut into 6 slices

  • 3 ciabatta rolls, halved

  • 1 garlic clove

  • 4 handfuls of shredded romaine lettuce

  • 4 tbsp mayonnaise

  • 4 tbsp chilli jam


METHOD

  1. In a bowl, mix the rapeseed oil, honey, smoked paprika, oregano, thyme, cayenne pepper, garlic powder, ginger powder, white wine vinegar, lemon juice, salt, and pepper together.

  2. Place the chicken thighs in a large bowl or ziplock bag, then pour over the marinade. Massage the marinade into the chicken, ensuring it's well-coated. Marinate in the fridge for at least 1 hour, or ideally, overnight for maximum flavour.

  3. In a small bowl, mix the mayonnaise and chilli jam until well combined. Set aside. 

  4. Drizzle a little oil on the cut sides of the ciabatta rolls. Grill the buns on a hot griddle pan for 1-2 minutes, until toasted and golden. Rub the toasted sides with the garlic clove. Set aside and keep warm.

  5. Heat the griddle or a large pan over medium-high heat. Grill the marinated chicken thighs for 3-4 minutes on each side, or until beautifully charred and fully cooked through. You may need to grill in batches depending on your pan size.

  6. In the same pan, drizzle a little oil and grill the halloumi slices for 1-2 minutes per side, or until golden and grill marks appear. 

  7. Spread the chilli jam mayonnaise generously on the bottom halves of the ciabatta rolls. Layer with shredded romaine lettuce, 2 grilled chicken thighs, and 2-3 slices of grilled halloumi. Top with the remaining half of the ciabatta roll.

  8. Serve your burgers with a side of fries and corn on the cob for a complete Nando fakeaway!
