Pizza beans is many things. It's a hybrid of Pa amb tomaquet, margarita pizza and beans on toast. It's also made in under 30 minutes and doesn't require much brain power. It’s ideal when you are feeling lazy but want something delicious. Swapping out tinned tomatoes with fresh ones to give this comforting dish a summery makeover but if you can’t even be bothered to grate a tomato, you can swap it for tinned. This is fantastic as a sharer but just as good for your lunch or dinner.
PIZZA BEANS
SERVES:4 MADE IN: 30 minutes /DIFFICULTY:Easy/ VEGGIE (if you use veggie parmesan)
INGREDIENTS

2x 400g cans white beans, drained (I used butter and cannellini)
2 beef tomatoes, halved
4 garlic cloves, sliced
1 tbsp dried oregano
1 tsp chili flakes
2 tbsp olive oil
525g mixed cherry and golden baby plum tomatoes
250g mozzarella
30g parmesan, grated
15g fresh basil, sliced, extra to garnish
Salt and pepper, to season
Toasted crusty bread, to serve (optional)
METHOD
Preheat the grill to high or 200c.
Place a box grater in a large bowl and grate the beef tomatoes. Discard the skins.
Stir in the beans and season with salt and pepper.
Heat the olive oil in a large frying pan over a medium heat. Saute the garlic until fragrant and then toss in the cherry tomatoes.
Add the oregano, chilli flakes and season with salt and pepper. Stir occasionally, until the sauce has thickened and flavourful. This should take around 15 minutes.
Scatter with fresh basil and top with slices and torn pieces of mozzarella. Sprinkle with parmesan and place under the grill for 3-5 minutes or until the cheese has melted.
Garnish with extra basil leaves and top the cheesy tomato beans on toasted, crusty bread or just dunk away.
