Nothing slaps more than a great homemade dip and this Edamame Houmous is bringing all the summer vibes. Fresh, punchy and packed with flavour, it's the perfect side to snack on during these sunny days. Dunk it with fluffy flatbreads, crisps or crunchy crudites. It takes no time to whizz up and looks sensational as part of a picky bits spread.
EDAMAME HOUMOUS
SERVES 4-6 // MADE IN 10 MINS /EASY// VEGAN

Ingredients
400g frozen edamame, defrosted (plus extra for garnish)
1 tbsp white miso paste
2 tbsp tahini
2 garlic cloves
Juice of 2 lemons
2 tsp ground cumin
3 tbsp green sriracha
50ml olive oil
Salt, to taste
To Garnish
Drizzle of sesame oil, Fresh dill, Furikake, Extra edamame
Method
Add the edamame, miso, tahini, garlic, cumin, lemon juice, green sriracha, and olive oil to a high-powered blender or food processor.
Season with salt and blitz until smooth and creamy. Scrape down the sides as needed. If it’s too thick, add a splash of cold water to loosen.
Spoon onto a plate and use the back of a spoon to create a shallow well. Drizzle with sesame oil and top with extra edamame, dill, and a sprinkle of furikake.
Serve with your favourite crisps, pitta, or crusty bread and dip away.
