ONE PAN KOREAN STREET TOAST

Brunch, but make it extra! This hybrid of an egg drop sandwich and Gilgeori toast features crispy bacon, melted cheese, and CONDENSED MILK slaw, all hugged by buttery, golden brioche. It's an easy one-pan dish that’s perfect for a lazy weekend or any time you want something indulgent. 😋

ONE PAN KOREAN STREET TOAST

Ingredients:

  • 3 eggs

  • 4 slices gouda cheese

  • 5 smoked bacon rashers

  • 2 slices thick brioche

  • 1/2 white cabbage, shredded

  • 1/2 large carrot, peeled and julienned

  • 2 tbsp mayonnaise

  • 2 tbsp honey

  • 2 tbsp condensed milk

  • 1/2 tsp mustard

  • 1 garlic clove, minced

  • 1 tbsp fresh parsley, chopped

  • 2 spring onions, sliced

  • 1 tbsp chives

  • 1 tsp butter

  • Salt, to taste


Method:

  1. Start by making the slaw. Place the shredded cabbage in a bowl, sprinkle with 1 tsp salt, and toss to coat. Let it sit for 15 minutes to allow the salt to draw out moisture. After 15 minutes, drain and rinse the cabbage, then pat it dry.

  2. In a separate bowl, combine the cabbage and carrot. In another bowl, mix together the mayonnaise, condensed milk, honey, mustard, garlic, and parsley. Season with salt to taste, then pour the mixture over the cabbage and carrot. Toss well to coat, and set aside.

  3. Crack the eggs into a bowl and season with salt. Add the spring onions and chives, then whisk until well combined.

  4. Heat a pan over low-medium heat and melt the butter. Lay the bacon rashers in the centre of the pan, slightly overlapping, and cook for 1-2 minutes.

  5. Place the slices of gouda cheese on top of the bacon and allow the cheese to melt.

  6. Pour the egg mixture around the edges of the pan, letting it settle around the cheese.

  7. Place the brioche slices on top of the melted cheese, aligning the edges so that the sandwich will fold evenly. Cook for 2-4 minutes, or until the egg mixture is set.

  8. Carefully flip the sandwich, exposing the bacon side. Top with the remaining cheese, then spoon the slaw mixture on top of the bottom slice of the sandwich.

  9. Gently tuck the sides of the omelette into the sandwich, then fold the top slice over to close.

  10. Flip the sandwich over to toast the brioche on the other side until golden brown and the cheese has melted.

  11. Cut the sandwich in half and enjoy immediately.
