SINGLE SERVE LAZY PEACH CRUMBLE

Ingredients
1 ripe peach, halved and stone removed
2 tbsp rolled oats
1 tbsp + 1 tsp maple syrup (divided)
1 tsp olive oil
2 pinches ground ginger
2 pinches cinnamon
1 tsp pistachios, roughly chopped
3 thyme sprigs
½ tsp vanilla extract
2–3 tbsp Greek yoghurt
Pinch of salt
Method
In a small bowl, mix together 1 tbsp maple syrup, olive oil, vanilla, a pinch each of ginger, cinnamon, and salt.
Brush both sides of the peach halves with the glaze and place them on a small baking tray.
Air fry at 180°C for 15 minutes, flipping halfway through, until the peaches are soft and caramelised.
Meanwhile, mix the rolled oats, pistachios, 1 tsp maple syrup, ginger, cinnamon, and the thyme leaves pulled from their stalks. Add a pinch of salt and stir to combine.
Once the peaches are caramelised, push them to one side of the tray and spread the crumble mixture on the other. Air fry for another 5 minutes until golden and crisp.
Serve the warm peaches with generous dollops of thick Greek yoghurt and sprinkle the crumble over the top.
