TAJIN RANCH CUCUMBERS

No joke, I can’t stop making these Tajin Ranch Cucumbers. They’re so moreish, delicious, and super refreshing. My secret ingredient is Tajin chilli & lime seasoning… and a few splashes of Maggi Liquid Seasoning. They take these cucumbers from tasty to totally addictive.
Perfect on the side of grilled salmon, chicken or anything off the BBQ. Or you like me and just eat the whole bowl on their own.
TAJIN RANCH CUCUMBERS
SERVES 4 // MADE IN 40 MINS /EASY// VEGGIE
Ingredients

1 large cucumber
2 tbsp lighter creme fraiche
1 tbsp Kewpie mayonnaise
1 tbsp garlic powder
Juice of ½ a lemon
5–6 splashes Maggi Liquid Seasoning
1 tbsp Tajin, plus extra to garnish
2 tbsp fresh dill, finely chopped
1 tsp flaky salt, plus extra to season
MethodUsing a mandolin or a sharp knife, slice the cucumber into thin rounds. Add them to a colander, sprinkle over the flaky salt, and toss to coat. Leave for 30 minutes to help draw out excess moisture. Then rinse and pat dry with kitchen paper.
Tip the cucumbers into a mixing bowl, then add the creme fraiche, Kewpie mayo, garlic powder, lemon juice, Maggi Liquid Seasoning, Tajin, and dill. Season with a little more flaky salt and stir until everything is evenly coated.
Finish with an extra sprinkle of Tajín on top. These are perfect on the side of grilled salmon or chicken, or as a punchy little BBQ side.
